Ingredients

For the Burger Patties:
- 1 Tbsp. extra-virgin olive oil
- 1 cup finely chopped red onion
- 1 cup finely chopped red bell pepper
- 2 (15-oz.) cans black beans, rinsed, drained, and patted dry
- 2 eggs
- 1/2 cup plain breadcrumbs
- 2 Tbsp. tahini or creamy almond butter
- 2 Tbsp. adobo sauce
- 1 Tbsp. Worcestershire sauce
- 1 1/2 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 6 brioche buns, for serving

Steps

- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- Heat 1 Tbsp. olive oil in a large skillet over medium heat. Add the diced onions and bell peppers, cooking for 6-8 minutes until they’re soft and the onions become translucent. The vegetables should be tender but not browned. Set aside to cool slightly.
- In a large mixing bowl, add the black beans. Using a potato masher or measuring cup bottom, mash about two-thirds of the beans, leaving the rest whole for texture. You want a mixture that’s partially mashed but still has some whole beans visible.
- Combine the cooled vegetables and remaining ingredients (eggs through black pepper) with the mashed beans. Mix thoroughly until everything is well incorporated. Test the mixture by forming a small patty – if it’s too wet to hold shape, gradually add 2-3 Tbsp. additional breadcrumbs.
- Divide the mixture into 6 equal portions (about 1/2 cup each) and shape into patties approximately 3/4 inch thick. Place on the prepared baking sheet, leaving space between each patty.
- Bake at 375°F (190°C) for 25-28 minutes, carefully flipping halfway through. Look for a golden-brown crust and slightly firm texture. For stovetop cooking, heat 1 Tbsp. oil over medium heat and cook 5-7 minutes per side until crispy.
