  • 4 tablespoons olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 teaspoon dried oregano

  1. In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, thinly sliced red onion, diced bell pepper, and chopped herbs. Pro tip: For extra crispness, soak your sliced onions in cold water for 5 minutes before adding to remove some of their sharp bite.
  2. For the dressing, whisk together the olive oil, red wine vinegar, and Dijon mustard in a separate bowl until fully emulsified – about 30 seconds of vigorous whisking. Season with salt and pepper (start with 1/4 teaspoon each), and add the dried oregano. The dressing should look smooth and slightly thickened.
  3. Pour the dressing over the vegetables, starting with about 3/4 of it. Toss gently using two large spoons to avoid bruising the vegetables. Add more dressing if needed – you want the vegetables lightly coated but not swimming in dressing. Let stand for 5 minutes before serving to allow flavors to meld.
