For the Dressing:
- 4 tablespoons olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 teaspoon dried oregano

Steps

- In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, thinly sliced red onion, diced bell pepper, and chopped herbs. Pro tip: For extra crispness, soak your sliced onions in cold water for 5 minutes before adding to remove some of their sharp bite.
