Easy Cheeseburger Soup

Every spoonful delivers that perfect blend of creamy, cheesy goodness with tender potatoes and savory beef, crowned with crispy bacon bits and fresh scallions. It’s like a warm hug in a bowl, but with all the satisfaction of biting into a fully loaded burger.

Ingredients

For the Base:
- 1 tablespoon olive oil
- 8 slices bacon, chopped into 1-inch pieces
- 1 pound lean ground beef (90/10 blend)
- 2 cups russet potatoes, peeled and diced
- 1 small yellow or white onion, grated
- 1 stalk celery, diced
Seasonings:
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/4 cup all-purpose flour
Liquids & Dairy:
- 2 cups beef stock
- 2 cups whole milk
- 8 ounces cream cheese
- 2 cups shredded cheddar cheese, plus extra for garnish
For Garnish:
- Reserved crispy bacon bits
- Chopped scallions

Steps

- Cook the Bacon (6-7 minutes)
- Heat a large heavy-bottomed pot over medium-low heat
- Add 1 tablespoon olive oil and chopped bacon
- Cook until bacon is crispy and fat has rendered, stirring frequently
- Reserve half the bacon for garnish in a small bowl
- Brown the Beef (5-6 minutes)
- Increase heat to medium
- Add ground beef to bacon drippings
- Break up meat with wooden spoon while cooking
- Look for well-browned meat with no pink remaining
- Add Vegetables (4-5 minutes)
- Add potatoes, grated onion, celery, and all seasonings
- Stir frequently until vegetables begin to soften
- TIP: Potatoes don’t need to be fully cooked at this stage
- Create the Base (8-10 minutes)
- Sprinkle in flour, cook for 1 minute while stirring
- Gradually add beef stock and milk, stirring constantly
- Bring to gentle simmer, reduce heat to low
- Cover and cook 6-8 minutes until potatoes are fork-tender
- Add Cheese (3-4 minutes)
- Reduce heat to very low
- Add cream cheese and cheddar in small portions
- Stir gently until completely melted
- IMPORTANT: Do not boil or cheese will separate
- Serve
- Ladle into bowls while hot
- Top with reserved bacon, extra cheese, and scallions
- Serve immediately for best texture and temperature
