Ingredients

For the Scrambled Eggs:

For the Roasted Potatoes:
- 2 large Idaho potatoes, cubed
- 1 tablespoon olive oil
- 1/4 teaspoon smoked paprika
- 2 teaspoons garlic powder
- Salt and pepper, to taste
For the Breakfast Sausage:
- 1/2 tablespoon olive oil
- 1/2 tablespoon minced garlic
- 1/2 white onion, finely diced
- 1 pound breakfast sausage (pork, chicken, or chorizo)
Additional Items:
- 10 8-inch tortillas (plain or whole wheat)
- 1 cup shredded cheddar cheese

Steps

For the Scrambled Eggs:
- Heat a large skillet to medium/high heat. Grease with olive oil or cooking spray.
- Whisk together 8 eggs, 2 tablespoons almond milk, salt, and pepper until well combined.
- Pour into heated pan and scramble until just set, about 3-4 minutes. They should be slightly glossy – don’t overcook!
For the Roasted Potatoes:
- Preheat oven to 400°F (200°C). Line a baking sheet with foil.
- Cut potatoes into 1/2-inch cubes for even cooking.
- Toss with oil and seasonings until evenly coated.

For the Breakfast Sausage:

Assembly and Storage:

Reheating Instructions:

- From thawed: Heat 60-90 seconds on high.
