  • 1/4 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste

For the Breakfast Sausage:

  • 1/2 tablespoon olive oil
  • 1/2 tablespoon minced garlic
  • 1/2 white onion, finely diced
  • 1 pound breakfast sausage (pork, chicken, or chorizo)

Additional Items:

  • 10 8-inch tortillas (plain or whole wheat)
  • 1 cup shredded cheddar cheese

For the Scrambled Eggs:

  • Heat a large skillet to medium/high heat. Grease with olive oil or cooking spray.
  • Whisk together 8 eggs, 2 tablespoons almond milk, salt, and pepper until well combined.
  • Pour into heated pan and scramble until just set, about 3-4 minutes. They should be slightly glossy – don’t overcook!

For the Roasted Potatoes:

  • Preheat oven to 400°F (200°C). Line a baking sheet with foil.
  • Cut potatoes into 1/2-inch cubes for even cooking.

Reheating Instructions:

  • From thawed: Heat 60-90 seconds on high.
