Slow Cooker Beef Stroganoff
This slow cooker beef stroganoff transforms humble ingredients into a rich, creamy dream of a dinner – all while you get to kick back and let your crockpot do the heavy lifting.

The magic happens as tender strips of sirloin simmer in a savory mushroom sauce that gets more delicious by the hour. We’re talking restaurant-quality flavor with practically zero effort. The secret? A blend of aromatics and fresh mushrooms that create an incredible depth of flavor you just can’t get from canned soup.

Ingredients

For the Meat & Seasonings:
- 1½ pounds boneless sirloin steak, cut into ½-inch thick strips
- 1 teaspoon kosher salt
- 1 teaspoon dried dillweed
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
For the Sauce:
- 16 ounces cremini baby bella mushrooms, sliced
- 1½ cups low-sodium beef broth, divided
- 3 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- ¼ cup cornstarch
- 1 cup plain whole milk Greek yogurt
For Serving:
- 8 ounces whole wheat egg noodles
- Fresh parsley or thyme, for garnish

Steps

- Prepare your slow cooker by coating the bottom with nonstick spray. Add the sirloin strips and season with salt, dill, black pepper, garlic powder, and onion powder. Toss thoroughly to ensure even coating. The seasoning should form a light crust on the meat.
- Layer in the mushrooms, then pour in 1 cup of the beef broth, Worcestershire sauce, and Dijon mustard. Cover and cook on high for 2-3 hours or low for 5-7 hours. The meat should be fork-tender and easily pull apart.
• For firmer mushrooms, add them halfway through cooking time
• Check meat tenderness by pulling a piece apart – it should separate easily - Create a slurry by whisking the cornstarch with remaining ½ cup broth until completely smooth with no lumps. Stir into the slow cooker and cook on high for 20 minutes until sauce thickens.
- Gently stir in the Greek yogurt. Cook an additional 10 minutes on high. The sauce should coat the back of a spoon.
• Keep temperature steady to prevent curdling
• Don’t let it boil after adding yogurt - While sauce finishes, cook noodles according to package directions until al dente. Serve stroganoff over hot noodles and garnish with fresh herbs.
